Benthic Barrel Aged Bar
We've worked with our friends at Half Acre Beer Companty for many years -collaborating on this barrel-aged imperial stout and producing a variant with our coffee in it! DMC picked up freshly emptied barrels from Half Acre and filled one with cacao from Tabasco, aging these beans for months and allowing them to take on the character left in the wood from Benthic and the bourbon aged prior to that. While this bar is our classic ratio of 70% dark chocolate, the barrel imparts a surprising sweetness to the chocolate.
