For this year's Devil's Lettuce, we are working with a washed Honduran coffee that has a surprising amount of acidity, with peach and citrus notes coming through in the cup. We paired this with a consistently bright coffee we've been purchasing from the Pacas family for years - a natural processed Bourbon from Finca Santa Petrona. The cherries are picked at the peak of ripeness, when they are a deep dark red color, and shade dried on raised beds for 3-4 weeks, slowly fermenting producing a juicy, berry forward profile!
